Kunafa!
Ingredients:

* 500g Kunafa dough, finely chopped using food processor - or buy a ready fine dough like I did. Note: you can leave the dough rough that works as well, it is up to you.
* 3 table spoons ghee + 1 tsp for coating the tray
* 500g of sweetened white cheese. I used nabulsi cheese. To sweeten I soaked it in water (changing the water on it every hour) for 6 hours.
For sugar syrup:
* 2 cups sugar
* 1 cup boiling water
* 1 tsp lemon juice
* 1 tsp orange blossom water
* finely chopped pistachios for garnishing
How to make it .

* Prepare sugar syrup: mix sugar+ water+ lemon juice + orange blossom water. Bring to boil then lower the heat and let it simmer.
* Prepare Kunafa dough: Rub well by hands. Add ghee + 1 Tsp sugar syrup ( addition of 1 tsp gives the dough a nice color) and rub well by hands.
* In a circular baking tray, put Kunafa dough, spread to cover bottom and press well by palm of the hand.
* Pour cheese over Kunafa layer and spread.
* This is the tricky part. On the stove don’t bake it this is where I was going wrong 😂. Set the pan over one side of the stove top, making sure the heat is covering only half the pan’s bottom. If the pan is centered over the stove top, the center of the Kunafa will burn.
* Using a towel, rotate the pan continuously for even baking. As the crust starts to cook, the cheese will start to melt. Once the crust turns brown and the cheese has melted take it off the stove and flip into another tray.
* The process of cooking requires patience! It takes roughly 20-40 min depending on the type of oven (electrical or gas).
* After flipping it! Pour the syrup and add some pistachio powder for decorations!
Quarantine popcorn
Matcha pancakes with sweetened sautéed berries! This is incredible.
Ingredients:
For the pancake batter- note I didn’t add sugar on the batter as it will be added later on the berries. If you will not make the berries sauce add 2 table spoons of sugar on the batter.

* 1 cup all-purpose flour
* 3/4 cup milk
* 1 egg
* 3 tablespoons matcha powder
For the reduced berries: .

* 2 cup of berries of your choice
* 2 table spoon of sugar - I used coconut sugar (sooo good)
* 1 table spoon cinnamon.
Directions:
Mix all the pancake ingredients together till you get a smooth batter.
In a pan, add a Tsp of butter and then start adding the batter gradually. You can size the pancakes as big or as small as you want them.
In the same pan, once your done with the pancakes add the berries. Let them cook for 5-10 min then add the sugar and cinnamon. They should simmer for another 5 min then you are good to go.
Stack the pancakes add the berries. Enjoy!
A quick recipe!
Basically this is a twist on a cheese steak sandwich.
The beef:
Beef stroganoff- marinate it in 3 table spoons soya sauce and 3 table spoons flour for an hour. Sautéed 1 chopped onion in 1 tablespoon of butter then add the beef. Let it cook then add 2 cups of mushrooms. Add 1/2 cup of water and leave it to simmer for 30 min.
The veggies:
Sautéed 1 yellow pepper and 1 shredded carrots.
2 cups Spinach - washed.
The assembling:
So use a pastry of your choice. I used the triangle shaped one cuz that is what I have. Add a layer of Philadelphia cream cheese then add another layer of pastry. Then add the spinach followed by a layer of pastry then add the beef, sautéed veggies and cheese 🧀. I used a mix of cheese ( Swiss,cheddar, and kashkaval). Last layer should be pastry, I then added an egg wash and some sparkling water as it makes the pastry crunchy. Bake for 40 minutes.
Note: If you prefer a not so soggy pastry remove excess water from the beef before adding it! I forgot to do that 😂. This recipe is one of the tastiest that I’ve shared! Give it a try and let me know what you think.
Honey cake for Mother’s Day.
Honey Cake Layers Ingredients:
4 Tbsp (1/4 cup) honey
3/4 cup granulated sugar
2 Tbsp unsalted butter
3 large eggs, room temperature, beaten with a fork
1 tsp baking soda
3 cups all-purpose flour
Direction:
In a large bowl add the eggs, honey, sugar and butter. Whisk over boiling water to melt the butter and sugar.
Remove off of the heat and add the baking soda then flour gradually. Kneed the dough and divide to 8 equal sized pieces.
Roll them out and cut into a circle. Poke the dough with the fork to avoid bubbles formation. Then bake one circle at a time till it turns golden. Bake it for roughly 4-5 min in an oven that is 250C Keep the excess dough and bake it at the end till it becomes crispy.
Cream Frosting Ingredients:
3 cups heavy cream
5 cups icing sugar
2 tsp vanilla extract or vanilla flavoring
Direction:
Beat the ingredients in a mixer until think cream.
The assembling of the cake:
Cover each layer with the cream frosting. So you would have a total of 8 layers of cake. The last layer is the frosting layer.
In a blender, crush the baked leftover dough until it is small powder crumbs. Sprinkle them on top of the frosting layer. Refrigerate overnight.
Note: I would be more generous than I was with the cream layers! As this can make your cake more moist and more flavorful. I had frosting cream leftovers.
