A special homemade meal that you can cook for your loved ones on Valentine’s day in under an hour!
This meal consists of:
- Bruschetta/Cheese bread
- Grilled lobsters marinated in lemon, garlic and herbs
- A tomato and basil based spaghetti
- 2 jumbo lobsters
- 200g of spaghetti
- 3 Tomatoes – Diced
- 1 onion – Diced
- 2 squeezed Lemons
- 3 Cloves of garlic
- 1 handful of basil
- 100g of butter
- 3 tablespoons of herbs
- 1 french baguette
- A cup of cheddar cheese
- 1/2 cup of mozzarella cheese
- 1/2 cup of shredded elemental cheese
- 1/2 cup of ricotta cheese
For the Bruschetta and the Cheese Bread, I used French Baguette bread
To start with the cheese bread – Simply get a mixture of cheese, I used elemental, cheddar, mozzarella and ricotta. Cut a square in the middle of the bread and remove excess bread ( You may want to use the excess bread later, so don’t throw it away!) add the cheese and brush the bread with olive oil. Bake it for 15 minutes.
For the bruschetta – In a medium mixing bowl, add the tomatoes, garlic, basil, rosemary vinegar or lime, olive oil, cheese, salt and pepper. Leave them to marinate for 15-20 minutes. Slice the baguette into circles and add the tomato mixture.
For the lobster –
I Bought some Jumbo Canadian lobsters and had them cut the shell in half to allow me to access the meat inside. I mixed some lemon, melted butter, herbs, smashed garlic and sea salt in a bowl and marinated each lobster. I put it in a preheated oven (350*F) for about 30 minutes to 45 minutes.
For the tomato and basil spaghetti-
Boil the spaghetti as specified on the box. In a pan add the chopped onions and garlic and stir them till the onions start to caramelize then add the tomatoes. Leave the tomatoes to release their juice then add the basil leaves some salt and pepper and a squeeze of lemon. Add the pasta sauce on the spaghetti and add a handful of parmesan cheese on top and your good to go!
